  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 medium onion, chopped
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 cup peas or broccoli (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the chopped onion in olive oil until soft.
  3. In a large bowl, combine cooked chicken, uncooked rice, cream of chicken soup, chicken broth, garlic powder, salt, and pepper. Mix well.
  4. If desired, fold in the optional veggies and half of the cheese.
  5. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
  6. Cover with foil and bake for 30 minutes; remove foil and bake an additional 15 minutes until golden brown.
