- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup long-grain white rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup low-sodium chicken broth
- 1 medium onion, chopped
- 1 tsp garlic powder
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 cup peas or broccoli (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, sauté the chopped onion in olive oil until soft.
- In a large bowl, combine cooked chicken, uncooked rice, cream of chicken soup, chicken broth, garlic powder, salt, and pepper. Mix well.
- If desired, fold in the optional veggies and half of the cheese.
- Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
- Cover with foil and bake for 30 minutes; remove foil and bake an additional 15 minutes until golden brown.
